Coruscant appeared for the space of 5 seconds in the 'Special Edition.' Title of first in-movie appearance goes to The Phantom Menace i'm afraid.
Regardless, Jared is correct, Coruscant first appeared in Timothy Zahns 'Heir to the Empire' in 1991. Still Jared's go.

George Lucas disliked the Cantina scene in A New Hope. It was supposed to convey the wide variety of different creatures, races, and species from across the galaxy in a setting that the audience could relate to. He didn't feel that it quite accomplished this, and was able to re-visit the idea in Jabba's Palace.
