If you include the the tv show (Which I view as non-canon personally) then it would be three times, unless I missed something.

It is three times, but not because of the non-canon TV show.
There was the time where Maul re-confronted Obi-Wan, then a time against Darth Vader. Then, as a solid-hologram, against Luke Skywalker.

Both the Maul/Kenobi story and the Maul/Luke story are non-canon. Maul vs Vader is canon, but it's some form of duplicate Maul created by a bunch of Palpatine fanboys.

Darth Maul never really returned, we don't if he actually returns yet in the Clone Wars. But the comic where he has cyborg legs is considered non-canon and I don't think the hologram counts and then you have PROXY turning into Maul, the doopleganger and so on... so I'd say two, the doopleganger and the upcoming clone wars episodes.
