Since you mention that you would like to learn specific forms, or more appropriately, Martial art styles, I would suggest doing research, either via the holonet or by asking your peers around.

The variety of different styles is great, and you'll have to decide prior to what you would like to follow.

Additionally, keep in mind that such fighting styles require a similar dedication to the lightsaber Forms, so do not expect to learn a number of them. That is if you want to pursue that path further.
